Zesty Brazilian Beef and Veggie Bowls

A vibrant, family-friendly meal featuring tender Brazilian-spiced beef, roasted vegetables, and a bright chimichurri sauce.
Ingredients
- 1.5 lbs beef sirloin, cubed
- 2 bell peppers, assorted colors, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 2 zucchini, cut into 1-inch pieces
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup parsley, chopped
- 1/2 cup cilantro, chopped
- 3 tbsp lime juice
- 2 cups brown rice, cooked

Preheat oven to 400°F. On a large baking sheet, toss the bell peppers, onion, and zucchini with 2 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes, stirring halfway, until tender and lightly charred.

In a large skillet, heat the remaining 1 tbsp olive oil over medium-high heat. Add the beef, garlic, cumin, and chili powder. Cook for 5-7 minutes, breaking up the beef, until browned and cooked through.
