Zesty Brazilian Beef Skewers with Chimichurri Rice

Juicy beef skewers marinated in a bright, garlicky chimichurri sauce, served over a bed of cilantro-lime rice for a delicious Brazilian-inspired family dinner.
Ingredients
- 1.5 lbs beef sirloin, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 tbsp lime juice
- 4 cloves garlic, minced
- 1/2 cup cilantro, chopped
- 1/4 cup parsley, chopped
- 2 tbsp red wine vinegar
- 1/2 tsp crushed red pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1.5 cups long grain rice
- 3 cups chicken or vegetable broth
- 1 tbsp lime zest
- 1/4 cup fresh cilantro, chopped

In a large bowl, combine the beef, 2 tbsp olive oil, 2 tbsp lime juice, 3 minced garlic cloves, 1/4 cup cilantro, and 1/8 tsp each salt and pepper. Toss to coat, cover, and marinate for 30 minutes.

Meanwhile, in a small bowl, whisk together the remaining 1 tbsp olive oil, 1 tbsp lime juice, 1 minced garlic clove, parsley, red wine vinegar, crushed red pepper, 1/4 tsp salt, and 1/8 tsp pepper. Set the chimichurri sauce aside.
