Ingredients
- 0.75 cup red lentils, rinsed
- 1.5 cups vegetable broth
- 0.25 cup coconut milk, full-fat
- 0.5 medium onion, finely diced
- 5 cloves garlic, minced, divided
- 1 tablespoon fresh ginger, minced
- 2.5 teaspoons berbere spice blend
- 0.5 teaspoon ground cumin
- 0.25 teaspoon turmeric
- 1 tablespoon tomato paste
- 2 cups collard greens, chopped
- 1 large injera flatbread, store-bought or homemade
- 2 tablespoons olive oil, divided
