Garlic Herb Pork Tenderloin with Roasted Veggies

Ingredients
- 1.5 lbs pork tenderloin
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups broccoli florets
- 2 medium carrots, peeled and cut into 1-inch pieces
- 1 medium red onion, cut into 1-inch pieces
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper

In a shallow baking dish, combine the olive oil, garlic, rosemary, thyme, salt, and black pepper. Add the pork tenderloin and turn to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, up to 24 hours.

Preheat the oven to 400°F. On a large baking sheet, toss the broccoli, carrots, and red onion with 2 tablespoons of olive oil, salt, and black pepper. Spread in a single layer.
