Greek Chicken Souvlaki Bowls with Tzatziki Drizzle

Tender chicken thighs marinated in a zesty Greek seasoning, grilled to perfection and served over a bed of fluffy rice, fresh veggies, and creamy tzatziki sauce. A family-friendly Mediterranean dinner with layers of flavor.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cucumber, diced
- 1 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 garlic clove, minced
- 2 tbsp fresh dill, chopped
- 2 cups cooked brown rice
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, sliced
- 1/4 cup crumbled feta cheese

In a large resealable bag, combine the chicken, 2 tbsp olive oil, 2 tbsp lemon juice, garlic, oregano, salt, and pepper. Seal the bag and refrigerate for 30 minutes to 2 hours.

Meanwhile, make the tzatziki sauce. In a small bowl, mix together the cucumber, yogurt, 1 tbsp lemon juice, garlic, and dill. Season with salt and pepper to taste. Cover and refrigerate until ready to serve.
