Greek Lemon Chicken Skewers with Tzatziki Dip

Tender, marinated chicken skewers paired with a cool, creamy tzatziki dipping sauce - a Greek-inspired family favorite!
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup plain Greek yogurt, for tzatziki
- 1 cucumber, peeled, seeded, and grated for tzatziki
- 2 tbsp lemon juice, for tzatziki
- 2 cloves garlic, minced, for tzatziki
- 1/4 cup olive oil, for marinade
- 1/4 cup lemon juice, for marinade
- 1 tsp oregano, dried, for marinade
- 3 cloves garlic, minced, for marinade
- 1/2 tsp salt
- 1/4 tsp black pepper

In a large bowl, combine the chicken, olive oil, lemon juice, oregano, garlic, salt, and pepper. Cover and marinate in the refrigerator for at least 30 minutes, up to 4 hours.

Meanwhile, make the tzatziki dip. In a medium bowl, stir together the Greek yogurt, grated cucumber, lemon juice, and minced garlic. Season with a pinch of salt and pepper. Cover and refrigerate until ready to serve.
