- 3 medium sweet potatoes, peeled and cut into wedges
- 1 lb green beans, trimmed
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp orange zest
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper

Preheat oven to 400°F. Toss the sweet potato wedges with 1 tbsp olive oil, salt, and pepper. Arrange in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway, until tender and lightly browned.
