Grilled Teriyaki Salmon with Roasted Sweet Potato Medley

Tender grilled salmon fillets marinated in a tangy teriyaki sauce, served with a colorful roasted sweet potato and vegetable medley for a balanced, flavor-packed GLP-1 friendly dinner.
Ingredients
- 4 salmon fillets, 4-6 oz each
- 1/2 cup teriyaki sauce, low-sodium
- 2 tbsp olive oil
- 3 medium sweet potatoes, cubed
- 2 cups broccoli florets
- 1 medium bell pepper, diced
- 3 cloves garlic, minced
- 1 tsp thyme, fresh, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper

Preheat oven to 400°F. Toss the cubed sweet potatoes, broccoli florets, diced bell pepper, minced garlic, thyme, salt, and pepper with 1 tbsp olive oil on a large baking sheet. Roast for 20-25 minutes, stirring halfway, until vegetables are tender and lightly browned.
