Ingredients
- 1 lb ground turkey, 93/7 lean
- 0.5 cup panko breadcrumbs
- 0.25 cup parmesan cheese, grated
- 1 whole egg
- 3 tbsp fresh parsley, minced
- 2 cloves garlic, minced
- 0.5 tsp salt
- 0.25 tsp black pepper
- 6 cups low-sodium chicken broth
- 1 cup ditalini pasta, small tube pasta
- 3 cups fresh spinach, packed
- 1 cup carrots, diced small
- 0.5 can (14 oz) diced tomatoes, canned
- 1 tsp dried italian seasoning
- 1 tbsp olive oil, for browning
