Korean-Inspired Ginger Beef & Scallion Noodle Bowls

Tender ground beef infused with ginger, garlic, and soy flavors, served over chewy egg noodles with charred scallions and a silky sesame-ginger sauce. This kid-friendly Korean-style bowl is ready in 25 minutes and perfect for building custom toppings!
Ingredients
- 1.25 lbs ground beef, 80/20 blend works best
- 8 oz egg noodles, or ramen noodles without seasoning packet
- 3 tbsp fresh ginger, minced
- 4 whole garlic cloves, minced
- 3 tbsp low-sodium soy sauce
- 2 tbsp honey
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 8 whole scallions, cut into 2-inch pieces
- 2 tbsp sesame seeds, white or black
- 1 tbsp vegetable oil, for cooking
- 1 cup water, for sauce

Bring a large pot of salted water to boil. Add egg noodles and cook according to package directions. Drain and set aside, tossing lightly with a touch of sesame oil to prevent sticking.

While noodles cook, heat vegetable oil in a large skillet over medium-high heat. Add ground beef and cook 5-6 minutes, breaking it into small pieces, until browned. Drain excess fat if needed.
