Korean Kimchi Jjigae with Tofu

A fragrant and spicy Korean stew featuring fermented kimchi, soft tofu, and aromatic vegetables, perfect for a comforting dinner.
Ingredients
- 2 cups kimchi, chopped
- 1 block firm tofu, cubed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons gochujang, Korean red chili paste
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar
- 4 stalks scallions, chopped
- 4 cups vegetable broth

In a large pot, combine the kimchi, tofu, onion, garlic, and ginger. Cook over medium heat for 5 minutes, stirring occasionally.
