Lemongrass Chicken Banh Mi Bowls

A family-friendly take on the classic Vietnamese banh mi sandwich, featuring lemongrass-marinated chicken, crisp vegetables, and nuoc cham dressing.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, diced into 1-inch pieces
- 3 stalks lemongrass, tender inner parts only, minced
- 4 cloves garlic, minced
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 2 tbsp lime juice
- 2 cups carrots, julienned
- 1 cup radishes, thinly sliced
- 1 cup English cucumber, julienned
- 1/2 cup cilantro, chopped
- 1/4 cup mint leaves, chopped
- 1/2 cup nuoc cham dressing
- 2 cups jasmine rice, cooked according to package instructions
