Mexican Achiote Pork Tacos

Ingredients
- 2 lbs boneless pork shoulder, cubed
- 2 tbsp achiote paste
- 1/2 cup orange juice
- 2 tbsp lime juice
- 4 cloves garlic, minced
- 1 tsp cumin
- 1 tsp oregano
- 20 corn tortillas
- 1 red onion, thinly sliced
- 1/2 cup cilantro, chopped
- 5 lime wedges

In a large bowl, combine the pork, achiote paste, orange juice, lime juice, garlic, cumin, and oregano. Mix well, cover and marinate in the refrigerator for at least 30 minutes (or up to 4 hours).

Heat a large skillet or cast-iron pan over medium-high heat. Add the marinated pork and cook, stirring occasionally, until the pork is browned and cooked through, about 15-20 minutes.
