Miso-Glazed Salmon Bowls

Flaky miso-glazed salmon fillets atop a bed of aromatic coconut rice, fresh vegetables, and crunchy toasted sesame seeds. A balanced, family-friendly Japanese-inspired dinner.
Ingredients
- 4 oz salmon fillets
- 2 tbsp miso paste
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 cup coconut milk
- 1 cup jasmine rice
- 1 cup edamame
- 2 medium carrots, peeled and julienned
- 1 medium cucumber, thinly sliced
- 4 whole scallions, thinly sliced
- 2 tbsp toasted sesame seeds

Preheat oven to 400°F. Line a baking sheet with parchment paper.

In a small bowl, whisk together the miso paste, honey, rice vinegar, and sesame oil. Place the salmon fillets on the prepared baking sheet and brush the tops with the miso glaze.
