Moroccan Chicken Skewers with Couscous Tabbouleh

Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1 cup couscous
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 tbsp lemon zest
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp black pepper

In a large resealable bag, combine the cubed chicken, 3 tbsp olive oil, 2 tbsp lemon juice, garlic, cumin, paprika, coriander, cinnamon, and 1/2 tsp salt. Marinate for at least 30 minutes, up to 24 hours.
