Moroccan Chicken Tagine with Citrus Couscous

A fragrant and flavorful Moroccan-inspired chicken tagine with tender chicken, warm spices, and a refreshing citrus couscous side dish.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 0.5 tsp ground cinnamon
- 0.25 tsp saffron threads
- 1 14oz can diced tomatoes
- 1 cup low-sodium chicken broth
- 0.5 cup green olives, pitted and sliced
- 1 lemon, zested and juiced
- 1 cup couscous
- 1 orange, zested and juiced
- 0.25 cup mint leaves, chopped
- 0.25 cup parsley, chopped

In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and sear on both sides until browned, about 3-4 minutes per side. Remove the chicken from the pan and set aside.

In the same pan, add the onion and sauté for 3-4 minutes until translucent. Add the garlic, cumin, coriander, paprika, cinnamon, and saffron. Cook for 1 minute, stirring constantly, until fragrant.
