Moroccan Chicken Tagine with Couscous Pilaf

A family-friendly Moroccan chicken tagine with a fragrant blend of spices, tender chicken, and a fluffy couscous pilaf on the side.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 tbsp ginger, grated
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 15 oz can crushed tomatoes
- 1 cup chicken broth
- 1 15 oz can chickpeas, drained and rinsed
- 1 cup couscous
- 1 tbsp orange zest
- 1/4 cup fresh parsley, chopped

In a large pot or Dutch oven, heat 1 tbsp olive oil over medium-high heat. Add the chicken thighs and brown on both sides, about 3-4 minutes per side. Remove chicken and set aside.

Reduce heat to medium, add the onion and sauté for 5 minutes until translucent. Add the garlic, ginger, cumin, coriander, and cinnamon. Cook for 1 minute until fragrant.
