Moroccan-Spiced Beef Tagine with Apricots & Almonds

Ingredients
- 1.5 lbs beef chuck roast, cut into 1-inch cubes
- 1 large onion, diced
- 4 cloves garlic, minced
- 1.5 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp paprika
- 0.75 tsp ground ginger
- 0.5 tsp turmeric
- 0.25 tsp cayenne pepper
- 1.5 cups low-sodium beef broth
- 1 can diced tomatoes, 14 oz
- 0.75 cup dried apricots, chopped
- 0.25 cup sliced almonds, toasted
- 1 tbsp honey
- 2 tbsp olive oil
- 1 tsp salt, or to taste
- 0.5 tsp black pepper
- 2 tbsp fresh cilantro, chopped, for garnish

Heat olive oil in a large Dutch oven or heavy pot over medium-high heat. Season beef cubes generously with salt and pepper.
