Zesty Moroccan Beef Kefta Bowls

Delicious Moroccan-inspired beef kefta meatballs nestled in a bed of fragrant couscous, roasted veggies, and fresh toppings for a flavorful family dinner.
Ingredients
- 1 lb ground beef
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup couscous
- 1 cup vegetable broth
- 2 medium carrots, peeled and diced
- 1 medium zucchini, diced
- 2 tbsp olive oil
- 1 lemon, juiced
- 1/4 cup fresh parsley, chopped
- 1 cup plain Greek yogurt

1. In a large bowl, combine the ground beef, onion, garlic, cumin, coriander, cinnamon, salt, and pepper. Mix well and form into 12 evenly sized meatballs.
