Moroccan Spiced Beef Tagine with Couscous Pilaf

Tender beef slow-cooked in a fragrant Moroccan-inspired sauce, served over fluffy couscous with roasted vegetables.
Ingredients
- 2 lbs beef chuck roast, cut into 1-inch cubes
- 1 onion, diced
- 4 cloves garlic, minced
- 2 tbsp Moroccan spice blend, or 1 tsp each cumin, cinnamon, paprika, ginger
- 2 tbsp tomato paste
- 1 can diced tomatoes, 14.5 oz
- 2 cups chicken or beef broth
- 1/2 cup dried apricots, chopped
- 1 cup couscous
- 3 carrots, peeled and chopped
- 1 zucchini, chopped
- 2 tbsp olive oil
- 1 lemon, juiced
- 1/4 cup parsley, chopped

In a slow cooker, combine the beef, onion, garlic, Moroccan spice blend, tomato paste, diced tomatoes, and broth. Cover and cook on low for 6-8 hours, until beef is very tender.

During the last 30 minutes of cooking, stir in the chopped apricots.
