Moroccan-Spiced Beef & Veggie Tagine

A fragrant Moroccan-inspired tagine with tender beef, roasted veggies, and warm spices. A family-friendly one-pot meal full of vibrant flavors.
Ingredients
- 1.5 lbs beef stew meat, cubed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 3 medium carrots, peeled and chopped
- 2 cups cauliflower, florets
- 1 can chickpeas, 15 oz, drained and rinsed
- 1 can diced tomatoes, 14 oz
- 2 cups beef broth, low-sodium
- 2 tbsp tomato paste
- 1 tbsp honey
- 1 tsp cumin
- 1 tsp cinnamon
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup couscous, uncooked

In a large Dutch oven or heavy-bottomed pot, brown the beef over medium-high heat until no longer pink, about 5 minutes. Transfer to a plate.
