Moroccan-Spiced Chicken Couscous Bowls

Tender, spice-rubbed chicken thighs served over fluffy couscous with roasted veggies, fresh herbs, and a creamy yogurt sauce for a flavor-packed Moroccan-inspired family meal.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, trimmed of excess fat
- 1 cup couscous, uncooked
- 3 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 0.5 tsp black pepper
- 2 medium carrots, peeled and diced
- 1 medium zucchini, diced
- 0.5 medium red onion, diced
- 0.5 cup plain Greek yogurt
- 2 tbsp lemon juice
- 0.25 cup fresh parsley, chopped
- 0.25 cup fresh mint, chopped

Preheat oven to 400°F. In a small bowl, combine cumin, coriander, paprika, garlic powder, salt, and pepper. Rub the spice mix all over the chicken thighs.

On a large baking sheet, toss the diced carrots, zucchini, and onion with 1 tbsp olive oil. Roast for 20 minutes, stirring halfway, until tender and lightly browned.
