Moroccan Spiced Chicken Tagine with Roasted Sweet Potatoes

A fragrant, slow-cooked Moroccan-style chicken stew with warm spices, chickpeas, and tender roasted sweet potatoes. This balanced, high-protein meal is perfect for supporting GLP-1 medication.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cubed
- 3 medium sweet potatoes, cubed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 15oz can chickpeas, drained and rinsed
- 1 14.5oz can diced tomatoes, no salt added
- 1 cup low-sodium chicken broth
- 2 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1/4 cup fresh parsley, chopped
- 2 tbsp lemon juice

Preheat oven to 400°F. Toss cubed sweet potatoes with 1 tbsp olive oil and spread on a baking sheet. Roast for 25-30 minutes, until tender.
