Ingredients
- 1.5 lbs boneless, skinless chicken thighs, trimmed of visible fat
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1 tsp paprika
- 1 14.5oz can crushed tomatoes
- 1 cup low-sodium chicken broth
- 4 cups cauliflower florets, riced or finely chopped
- 2 tbsp lemon juice
- 1/4 cup fresh parsley, chopped
