Moroccan-Spiced Chickpea & Eggplant Tagine with Bulgur Pilaf

Ingredients
- 0.75 cup canned chickpeas, drained and rinsed
- 1.5 cups eggplant, cubed, about 1-inch pieces
- 0.75 cup diced tomatoes, canned or fresh
- 0.5 cup vegetable broth, low-sodium
- 0.25 cup dried apricots, chopped
- 0.5 medium onion, diced
- 2 cloves garlic, minced
- 0.75 teaspoon ground cumin
- 0.25 teaspoon ground cinnamon
- 0.25 teaspoon ground ginger
- 0.5 teaspoon paprika
- 0.25 teaspoon turmeric
- 0.5 cup bulgur wheat, uncooked
- 1 cup vegetable broth, for bulgur
- 0.25 cup sliced almonds, toasted
- 1.5 tablespoons olive oil
- to taste salt and black pepper
- 1 tablespoon fresh cilantro, chopped, optional garnish
