Moroccan Spiced Lamb Skewers with Roasted Vegetable Couscous

Tender marinated lamb skewers seasoned with warm Moroccan spices, served over a bed of roasted bell peppers, zucchini, and onions with fluffy couscous. A nourishing, high-protein dinner that supports GLP-1 medication.
Ingredients
- 1 lb lamb loin chops, cubed into 1-inch pieces
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 bell peppers, diced
- 2 zucchini, diced
- 1 small red onion, diced
- 1 cup couscous
- 1 cup vegetable broth
- 1/4 cup parsley, chopped

In a medium bowl, combine the cubed lamb, 1 tablespoon olive oil, lemon juice, garlic, cumin, coriander, paprika, salt, and pepper. Toss to coat the lamb evenly. Cover and marinate for 30 minutes to 1 hour in the refrigerator.

Preheat oven to 400°F (200°C). On a large baking sheet, toss the diced bell peppers, zucchini, and red onion with the remaining 1 tablespoon of olive oil. Season with a pinch of salt and pepper. Roast for 20-25 minutes, stirring halfway, until the vegetables are tender and lightly charred.
