Moroccan Spiced Lamb Tagine

A fragrant and hearty Moroccan-inspired lamb stew, slow-cooked with aromatic spices, vegetables, and tender lamb chunks.
Ingredients
- 2 lbs lamb shoulder, cut into 1-inch cubes
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1/4 tsp saffron threads
- 1 15oz can diced tomatoes
- 2 cups chicken or vegetable broth
- 3 medium carrots, peeled and sliced
- 1 15oz can chickpeas, drained and rinsed
- 2 tbsp lemon juice
- 1/4 cup chopped cilantro

In a large pot or Dutch oven, brown the lamb cubes over medium-high heat until golden on all sides, about 5-7 minutes. Remove lamb from pot and set aside.

Add the onions to the pot and sauté until translucent, about 3-5 minutes. Add the garlic and spices (cumin, coriander, cinnamon, paprika, saffron) and cook for 1 minute until fragrant.
