Moroccan-Style Chicken Skewers with Quinoa Tabbouleh

Tender grilled chicken skewers seasoned with aromatic Moroccan spices, paired with a refreshing quinoa tabbouleh salad for a nutrient-dense, GLP-1 friendly dinner.
Ingredients
- 1.5 lbs Boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup Quinoa, dry, rinsed
- 1 medium Cucumber, diced
- 1 pint Cherry tomatoes, halved
- 1/2 cup Fresh parsley, chopped
- 1/4 cup Fresh mint, chopped
- 3 tbsp Lemon juice
- 2 tbsp Olive oil
- 3 cloves Garlic, minced
- 1 tsp Paprika
- 1 tsp Cumin
- 1/2 tsp Cinnamon
- 1/2 tsp Salt
- 1/4 tsp Pepper

1. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, cover, and reduce heat to low. Simmer for 15-20 minutes, until quinoa is tender. Fluff with a fork and let cool.

2. In a large bowl, combine the cooled quinoa, diced cucumber, halved cherry tomatoes, chopped parsley, and chopped mint. Drizzle with lemon juice and olive oil, then toss to coat. Season with salt and pepper to taste.
