Pan-Seared Shrimp Saganaki with Crispy Halloumi & Charred Tomato Orzo

Greek-inspired pan-seared shrimp bathed in a vibrant tomato-feta sauce, topped with crispy fried halloumi cheese, served over charred tomato orzo with fresh oregano and lemon zest
Ingredients
- 1.5 lbs large shrimp, peeled and deveined
- 8 oz halloumi cheese, cut into 8 slices
- 1.5 cups orzo pasta, whole grain or regular
- 2 cups cherry tomatoes, halved
- 0.75 cup feta cheese, crumbled
- 6 tbsp extra virgin olive oil, divided
- 5 cloves garlic cloves, minced
- 0.5 cup dry white wine, optional, use vegetable broth if preferred
- 3 tbsp fresh oregano, chopped
- 2 tbsp fresh parsley, chopped
- 2 whole lemon, zest and juice
- 1 tsp sea salt, to taste
- 0.5 tsp black pepper, to taste
- 0.25 tsp red pepper flakes, optional
- 2 cups vegetable broth, for orzo

Bring vegetable broth to a boil in a large pot. Add orzo and cook until al dente (about 10 minutes). Reserve 0.5 cup pasta water, then drain.

While orzo cooks, pat shrimp dry with paper towels. Season with salt, pepper, and red pepper flakes.
