Peruvian Lomo Saltado Breakfast Skillet

A flavorful Peruvian-inspired breakfast skillet with sautéed beef, peppers, onions, and a fried egg. Served with crispy fried potatoes and a drizzle of creamy avocado sauce.
Ingredients
- 1.5 lbs beef sirloin, cut into 1-inch cubes
- 3 medium russet potatoes, cut into 1/2-inch cubes
- 1 large onion, diced
- 2 medium red bell pepper, sliced
- 4 cloves garlic, minced
- 3 tbsp soy sauce
- 2 tbsp red wine vinegar
- 1 tsp cumin
- 1 tsp oregano
- 10 eggs
- 1 large avocado, for sauce
- 2 tbsp lime juice, for sauce
- 1/4 cup cilantro, chopped, for garnish

1. Heat 2 tbsp of oil in a large skillet over medium-high heat. Add the cubed beef and cook until browned on all sides, about 5-7 minutes. Remove beef from the skillet and set aside.

2. Add the diced potatoes to the skillet and cook, stirring occasionally, until golden brown and crispy, about 10-12 minutes. Remove potatoes from the skillet and set aside.
