Peruvian Purple Potato & Black Bean Causa with Avocado-Lime Crema

A stunning vegan take on the classic Peruvian layered potato cake, featuring vibrant purple potatoes, seasoned black beans, and topped with a silky avocado-lime crema. Served with a bright cilantro-lime quinoa salad for a complete dinner that's both elegant and nourishing.
Ingredients
- 250 g purple potatoes, about 3 small, peeled and cubed
- 0.75 cup black beans, canned, drained and rinsed
- 0.5 whole ripe avocado, for crema
- 2 tbsp fresh lime juice, divided
- 2 tbsp unsweetened plant milk, for avocado crema
- 2 whole garlic cloves, minced
- 0.5 tsp cumin
- 0.5 tsp smoked paprika
- 0.25 cup fresh cilantro, chopped, divided
- 2 tbsp red onion, finely diced
- 0.5 cup cooked quinoa, prepared ahead
- 0.25 cup cucumber, diced
- 0.25 cup cherry tomatoes, halved
- 2 tsp extra virgin olive oil

Boil cubed purple potatoes in salted water for 15-18 minutes until very fork-tender. Drain well and let cool slightly.

Mash the cooked potatoes until smooth. Mix in ají amarillo paste, 1 minced garlic clove, and 1 tsp lime juice. Season with salt and pepper. Set aside to cool.
