Portuguese Golden Cod & Chickpea Skillet with Garlic Bread

Ingredients
- 1.5 lbs cod fillets, 4 fillets, patted dry
- 2 cans chickpeas, 15 oz cans, drained and rinsed
- 1 can diced tomatoes, 14.5 oz, no added sugar
- 6 cloves garlic, minced
- 1 medium yellow onion, diced small
- 1 cup chicken broth, low-sodium
- 4 tbsp olive oil, divided
- 3 tbsp fresh parsley, chopped
- 1 tsp fresh thyme, or 1/2 tsp dried
- 1 tsp smoked paprika
- 1 tsp sea salt, divided
- 1/2 tsp black pepper
- 2 tbsp lemon juice, fresh squeezed
- 1 loaf crusty bread

Preheat oven to 400°F. Mix softened butter with 2 cloves minced garlic. Slice bread in half lengthwise and spread garlic butter on cut sides. Set aside.

Heat 2 tbsp olive oil in a large oven-safe skillet over medium heat. Add diced onion and cook 3-4 minutes until softened. Add minced garlic, cook 1 minute until fragrant.
