Seared Ahi Tuna Poke Bowl with Edamame and Quinoa

A light and refreshing Hawaiian-inspired poke bowl featuring seared ahi tuna, crisp edamame, and fluffy quinoa - a delicious GLP-1 friendly dinner that's easy to digest and packed with protein!
Ingredients
- 1.5 lbs ahi tuna steaks, sushi-grade
- 2 cups quinoa, cooked
- 2 cups edamame, shelled
- 1 large avocado, diced
- 1 medium cucumber, diced
- 4 whole green onions, sliced
- 2 tbsp sesame seeds
- 3 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 2 tbsp lime juice
- 1 tsp sesame oil
- 1 tbsp ginger, grated

1. Cook the quinoa according to package instructions. Fluff with a fork and set aside to cool.

2. Bring a pot of water to a boil. Add the edamame and cook for 3-4 minutes until tender. Drain and rinse with cold water.
