Seared Ahi Tuna with Quinoa and Roasted Vegetables

Succulent ahi tuna steak seared to perfection, served over a bed of fluffy quinoa and roasted seasonal vegetables for a satisfying and nutrient-dense GLP-1 friendly dinner.
Ingredients
- 4 4 oz ahi tuna steaks, or other lean white fish
- 1 cup quinoa, dry
- 2 cups broccoli florets
- 2 medium zucchini, sliced
- 2 medium bell peppers, mixed colors, sliced
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper

Preheat the oven to 400°F. Toss the broccoli, zucchini, and bell peppers with 1 tbsp of olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
