Ingredients
- 1 lb sushi-grade tuna, cut into 1-inch cubes
- 1 cup quinoa, uncooked
- 2 medium avocado, diced
- 6 cups mixed greens, baby spinach, arugula, and kale
- 1 pint cherry tomatoes, halved
- 1 medium cucumber, diced
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
