- 2 tablespoons lime juice, fresh squeezed
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 3 medium sweet potatoes, diced
- 2 cups Brussels sprouts, halved
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Preheat oven to 400°F. Toss the diced sweet potatoes and Brussels sprouts with 1 tablespoon of olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
