Seared Tuna Poke Bowl with Mango Salsa

A fresh and flavorful GLP-1 friendly dinner featuring seared tuna, vibrant mango salsa, and nutrient-dense vegetables over a bed of quinoa.
Ingredients
- 1 lb sushi-grade tuna, cut into 1-inch cubes
- 2 cups quinoa, cooked according to package
- 2 large mango, diced
- 1 large cucumber, diced
- 1/2 medium red onion, finely chopped
- 1/4 cup cilantro, chopped
- 3 tbsp lime juice
- 2 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp salt
- 1/4 tsp pepper

In a medium bowl, combine the diced mango, cucumber, red onion, cilantro, lime juice, rice vinegar, sesame oil, salt, and pepper. Stir to mix well and set aside.

Pat the tuna cubes dry with paper towels. Heat a large non-stick skillet over high heat. Add the tuna cubes and sear for 2-3 minutes per side, until the outside is lightly browned but the inside is still pink and rare.
