Ingredients
- 1 lb sushi-grade tuna, cut into 1-inch cubes
- 1 cup quinoa, cooked according to package instructions
- 2 cups edamame, shelled and cooked
- 1 medium cucumber, diced
- 1 medium avocado, diced
- 1/4 cup red onion, thinly sliced
- 2 tbsp sesame seeds
- 3 tbsp rice vinegar
- 2 tbsp low-sodium soy sauce
- 1 tsp sesame oil
- 1 tbsp lime juice
- 1 tsp grated ginger
- 1/2 tsp sriracha, optional, for spice
