Ingredients
- 1 lb beef tenderloin, thinly sliced
- 2 cups brown rice, cooked
- 3 cups broccoli florets, fresh or frozen
- 1 bell pepper, sliced
- 1 cup snow peas, trimmed and halved
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp cornstarch
- 1/4 tsp crushed red pepper flakes, optional
- 2 green onions, sliced

In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, cornstarch, and red pepper flakes (if using). Set aside.

Heat a large non-stick skillet or wok over high heat. Add the beef and stir-fry for 2-3 minutes until browned on the outside but still slightly pink in the center. Remove beef from the pan and set aside.
