Ingredients
- 1.5 lbs boneless, skinless chicken breast, cut into 1-inch pieces
- 4 cups broccoli florets, fresh or frozen
- 2 cups brown rice, cooked
- 1/4 cup low-sodium soy sauce
- 2 tbsp rice vinegar
- 2 tsp grated ginger
- 3 cloves minced garlic
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 3 green onions, sliced
- 2 tbsp toasted sesame seeds

In a small bowl, whisk together the soy sauce, rice vinegar, ginger, garlic, and sesame oil. Set aside.

In a large skillet or wok, heat 1 tsp of sesame oil over medium-high heat. Add the chicken and stir-fry for 5-7 minutes until lightly browned and cooked through. Remove the chicken from the skillet and set aside.
