Spanish Chorizo & Shrimp Paella Party Bowl

Ingredients
- 8 oz Spanish chorizo sausage, sliced into half-moons
- 1 lb large shrimp, peeled and deveined
- 1.5 cups short-grain paella rice, bomba or arborio, uncooked
- 4 cups chicken or vegetable broth, warm
- 0.5 teaspoon saffron threads, steeped in 2 tbsp warm water
- 1 cup zucchini, diced
- 1 cup diced tomatoes, fresh or canned
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika, pimentón
- 0.75 cup frozen peas
- 1 whole lemon, cut into wedges
- 0.25 cup fresh parsley, chopped

Heat olive oil in a large paella pan or wide shallow skillet over medium-high heat. Add chorizo slices and cook 3-4 minutes until edges brown and oil releases. Remove to a plate.

Add diced onion to the same pan and sauté 3 minutes until softened. Add minced garlic and smoked paprika, cook 1 minute until fragrant.
