Spicy Korean-Inspired Pork Bulgogi Bowls

Savory and sweet Korean-inspired pork bulgogi served over garlicky fried rice with pickled veggies and a drizzle of creamy gochujang sauce.
Ingredients
- 1.5 lbs ground pork
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp gochujang
- 4 green onions, sliced
- 2 cups white rice
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 carrots, julienned
- 1 cucumber, julienned
- 2 tbsp rice vinegar
- 1 tsp sugar
- 1/4 cup mayonnaise
- 2 tbsp gochujang
- 1 lime, juiced

In a large bowl, combine the ground pork, soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, and 2 tbsp gochujang. Mix well and let marinate for 30 minutes.

Heat a large skillet over medium-high heat. Add the pork mixture and cook, breaking it up with a spatula, until browned and cooked through, about 8-10 minutes.
