Teriyaki Chicken Stir-Fry with Sesame Bok Choy

A quick and flavorful Japanese-inspired stir-fry with tender chicken, crisp vegetables, and a sweet-savory teriyaki sauce, served over a bed of nutty sesame bok choy.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 head bok choy, leaves separated and chopped
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp honey
- 2 tsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp sesame seeds
- 2 cups brown rice, cooked

In a small bowl, whisk together the soy sauce, rice vinegar, honey, and cornstarch. Set aside.

Heat 1 tbsp sesame oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until cooked through, about 5-7 minutes. Remove chicken from the pan and set aside.
