Teriyaki Pork Tenderloin Bowls

Tender pork tenderloin in a sweet and savory teriyaki glaze, served over fluffy quinoa with roasted broccoli and carrots.
Ingredients
- 1.5 lbs pork tenderloin
- 1 cup quinoa
- 2 cups broccoli florets
- 1 cup carrot sticks
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 2 tbsp rice vinegar
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 1/4 cup water

Preheat oven to 400°F. Place the pork tenderloin on a baking sheet and roast for 20-25 minutes, until the internal temperature reaches 145°F. Let rest for 5 minutes before slicing.

While the pork is cooking, prepare the quinoa according to package instructions. Toss the broccoli and carrots with a drizzle of olive oil, salt, and pepper. Roast for 15-20 minutes, until tender.
