Teriyaki Pork Stir-Fry with Udon Noodles

A flavorful Japanese-inspired stir-fry with tender pork, crisp vegetables, and chewy udon noodles in a sweet and savory teriyaki sauce. A family-friendly meal the whole crew will love!
Ingredients
- 1 lb pork tenderloin, cut into 1-inch cubes
- 8 oz udon noodles, fresh or frozen
- 2 cups broccoli florets, cut into bite-sized pieces
- 1 red bell pepper, sliced
- 2 medium carrots, julienned
- 1/3 cup low-sodium soy sauce
- 2 tbsp rice vinegar
- 2 tbsp honey
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 1/4 cup water
- 4 green onions, sliced
- 2 tbsp sesame seeds

In a medium bowl, whisk together the soy sauce, rice vinegar, honey, garlic, ginger, and sesame oil. Add the pork and toss to coat. Cover and refrigerate for 30 minutes to 1 hour.
