Teriyaki Pork Tenderloin Bowls with Edamame Fried Rice

Juicy teriyaki-glazed pork tenderloin served over a bed of vibrant edamame fried rice - a delicious Japanese-inspired family dinner!
Ingredients
- 1.5 lbs pork tenderloin
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 cups frozen edamame
- 2 cups brown rice, cooked
- 1 cup carrots, shredded
- 4 green onions, sliced
- 2 eggs, beaten
- 2 tbsp soy sauce

Preheat oven to 400°F.

In a small bowl, whisk together soy sauce, brown sugar, garlic, ginger, rice vinegar, and sesame oil. Place pork tenderloin in a baking dish and pour the teriyaki marinade over the top, turning to coat. Bake for 25-30 minutes, until pork reaches 145°F internal temperature.
