Teriyaki Salmon Stir-Fry

A quick and flavorful stir-fry featuring tender salmon, crisp vegetables, and homemade teriyaki sauce. A family-friendly Japanese-inspired dinner.
Ingredients
- 1.5 lbs salmon fillets, cut into 1-inch pieces
- 3 cups broccoli florets
- 1 medium carrot, julienned
- 1 medium bell pepper, sliced
- 2 cups snap peas
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp cornstarch
- 2 tbsp vegetable oil

In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, and cornstarch. Set aside.

Heat the vegetable oil in a large skillet or wok over high heat. Add the salmon, broccoli, carrot, bell pepper, and snap peas. Stir-fry for 4-5 minutes until the vegetables are crisp-tender.
