- 1.5 cups canned white beans, drained and rinsed
- 4 medium Roma tomatoes, diced
- 1 large red bell pepper, diced
- 0.5 medium yellow onion, thinly sliced
- 5 tbsp extra virgin olive oil, divided
- 3 whole garlic cloves, minced
- 0.33 cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 0.5 tsp red pepper flakes
- 0.5 tsp ground cumin
- 0.75 tsp sea salt
- 0.5 tsp black pepper
- 1 tbsp white wine vinegar, for poaching water
