Vibrant Vietnamese Chicken Vermicelli Bowls

A vibrant and flavorful Vietnamese-inspired dinner the whole family will love! Tender chicken, fresh veggies, and zippy dressing make this a fun and nutritious meal.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 8 oz vermicelli rice noodles
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro
- 1/4 cup chopped roasted peanuts
- 4 lime wedges
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tsp sriracha or chili garlic sauce

1. In a medium bowl, combine the soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and sriracha. Add the chicken and toss to coat. Marinate for 15-30 minutes.

2. Bring a large pot of water to a boil. Add the vermicelli noodles and cook for 2-3 minutes until tender. Drain and rinse under cold water.
