- 2 tbsp brown sugar
- 4 cloves garlic, minced
- 2 whole Thai red chilies, sliced, seeds removed for less heat
- 2 tbsp fresh lime juice
- 4 heads baby bok choy, halved lengthwise
- 0.75 cup brown rice, uncooked
- 3 tbsp vegetable oil, divided
- 1.5 cups water, for rice
- 1 tsp sea salt
- 0.5 tsp black pepper
- 0.25 cup fresh cilantro, leaves for garnish
- 2 stalks scallions, sliced for garnish
